Experience the Éclipse chocolat this Valentine's Day
As February approaches, the season of love brings with it new culinary delights from the world-renowned chef Joel Robuchon. From February 1 to March 15, 2026, "Le Café de Joël Robuchon" located at the Nihonbashi Takashimaya Shopping Center in Tokyo will introduce a limited-edition dessert that is sure to tempt your taste buds: the "Éclipse chocolat – a parfait of rich chocolate and citrus."
This exquisite parfait is more than just a sweet treat; it’s a celebration of French cuisine fused with a luxurious chocolate experience. The word ‘parfait’ itself, which has become a familiar term in Japan, originates from French, meaning 'perfect' or 'complete.' This dessert encompasses everything a parfait should be—light, creamy, and decadently delicious.
Layers of Delightful Chocolate Flavors
The Éclipse chocolat features a varied texture made with the premium chocolate from Valrhona, a brand that has garnered respect among top chefs worldwide since its inception in 1922. The dessert combines dense and velvety mousse chocolate, smooth chocolate cream, whipped chocolate, and a glassy chocolate finish. The depth of flavor in this new creation develops through meticulous layering, appealing not only to the palate but also to the eyes.
An unexpected yet harmonious note comes from the addition of kumquat compote, which imbues the parfait with a subtle sweetness and tartness, enhanced by orange zest for an aromatic lift. These flavors meticulously complement each other, resulting in an intricate taste profile that brings a unique edge to the chocolate.
To add a delightful crunch, the dessert is accented with caramelized hazelnuts and pearl crackling, providing a textural contrast that balances the creaminess of the parfait. But it doesn’t stop there. To complete this sensory journey, a warm, orange-flavored chocolate sauce is poured over the parfait right before the guest's eyes, epitomizing the richness of chocolate artistry.
