The launch will commence with a dozen Gelson's stores, gradually expanding to all locations shortly thereafter. Products will include a delightful range of options, such as spaghetti, tagliatelle, tortellini, meat lasagna—featuring housemade pasta sheets and a slow-cooked bolognese sauce—and a rich bolognese sauce itself, simmered for an impressive nine hours. Additionally, customers can find tortellini and gnocchi at Claro's Italian Markets, emphasizing fresh ingredients over rehydrated potato products.

Pasta Sisters was founded in 2015 by Paola Da Re and her son Francesco, who passionately carry forward generational family recipes. Da Re dedicated extensive time to sourcing premium ingredients from both Italy and California, ensuring that the family’s culinary traditions could be experienced authentically. The use of the finest products shines through in every step of their production process, which includes hand-cutting pasta daily starting from as early as 6 a.m.
All Pasta Sisters pasta is made using top-quality "00" flour, eggs, and premium extra-virgin olive oil, avoiding fillers or preservatives. The flour originated from the renowned Petra Molino Quaglia mill in Veneto, Italy, which specializes in a unique flaking process that provides the pasta with its signature golden hue and delightful texture. Their bolognese sauce is renowned for its deep flavor, achieved through its long simmering process.
Pasta Sisters has invested in the best technology for pasta production, utilizing Italian Emiliomiti equipment. Remarkably, they own the only tortellini-making machine in the United States certified by the Bologna Chamber of Commerce, a significant distinction since traditional tortellini is usually crafted by hand. To maintain the quality of their products, Pasta Sisters flash-freezes their pasta soon after production, preserving its taste and texture for the customers. When boiled, it tastes just like fresh pasta.
