Sillage: A Restaurant Focused on Aromatic Experiences
The name Sillage translates from French to mean "the aroma left behind". The concept embodies the idea that though the physical shape of the dish may fade, the flavor and memories linger long after. Sillage’s culinary philosophy combines traditional French techniques with the essence of Japanese fermentation and the seasonal experiences of Japanese cuisine, offering what they define as “contemporary bistronomy.”
Meet the Chef: Kazuki Munesada
Kazuki Munesada, Sillage’s chef, hails from Okayama and began his culinary journey at a local hospitality school. He sharpened his skills at The Westin Hotel Awaji, then moved to Kobe Kitano Hotel to learn classic French techniques. Further refining his craft at the Michelin-starred restaurant Jérôme Nutile in Nîmes, France, under a MOF chef, he mastered modern and precise approaches to using ingredients. Upon returning to Japan, he continued to grow his gastronomical expertise at Michelin-starred L'ARGENT in Tokyo. In every dish he creates, he pours his dedication into the selection of ingredients and finishing touches, ensuring each bite resonates with flavor and memories.
