Mandarin Oriental Tokyo, located in Nihonbashi Muromachi, Chuo-ku, is celebrating its 20th anniversary with a remarkable culinary collaboration featuring renowned Colombian chef Juan Manuel Valierntos. This exclusive event, taking place from July 11 to 13, 2025, will showcase the exceptional talents of executive chef Daniele Carson, who will join forces with Valierntos to present a memorable dining experience.

Valierntos, known globally as "JuanMa," is a Michelin-starred chef and the founder of the acclaimed El Cielo, with locations in Bogotá, Medellín, Miami, and Washington D.C. His Miami and D.C. branches have received Michelin stars, and his restaurant in New York is recognized as one of the top 100 in North America. Juan Manuel has consistently been a rising star in the culinary world, earning a spot on the Latin America’s 50 Best Chefs list for three consecutive years and being named one of the world’s best chefs in 2016. His innovative approach to Colombian cuisine has redefined dining, offering an experience that harmonizes flavor, emotion, and storytelling.

During this special collaboration event, guests will be treated to a 10-course dinner that emphasizes the artistry and innovative spirit of both chefs. Utilizing seasonal and locally sourced ingredients, the duo will create an unforgettable dining journey, featuring signature dishes that intertwine Italian and Colombian flavors in a contemporary manner. Attendees will have the chance to interact with both chefs, enhancing the overall experience.

Included with the special dinner course is a premium extra virgin olive oil (500ml) from Sicily to take home.

Daniele Carson
Born in Rome, Italy, Daniele became the executive chef of Mandarin Oriental Tokyo in 2016. With his culinary journey beginning at the age of 14, he honed his skills at various prestigious hotels and restaurants, ultimately bringing his expertise to Mandarin Oriental. Known for his innovative Italian dining at Keshiki and the renowned Pizza Bar on 38th, Carson's dishes reflect his respect for Japanese culinary techniques and seasonal ingredients, merging Italian heritage with a touch of Japanese flair.

Juan Manuel Valierntos
Born in Medellín, Colombia, on June 16, 1983, Valierntos is not just a celebrated chef; he is also an entrepreneur and philanthropist. As the founder of El Cielo Hospitality Group, he has played a pivotal role in modern Colombian cuisine's evolution. Acclaimed for his creativity and culinary innovation, Valierntos has earned numerous accolades, including being named one of the 'World's Most Influential Chefs' and a spot on Latin America's 50 Best Chefs list multiple times.
