The Grey Room: A Spicy Revival in Ginza
On September 10, 2025, the renowned cocktail bar,
The Grey Room, located in the heart of Ginza, will reopen its doors, presenting a fresh and innovative take on mixology inspired by spices. Managed by
Transit Hospitality Management, this bar aims to elevate the cocktail experience beyond mere flavor combinations.
A Concept of Spice Mixology
The concept of
Spice Mixology embraces the intricate flavors and aromas that spices can bring to cocktails. This experience is not just about mixing flavors but crafting a narrative for each drink that stimulates every sense. When you take a sip, the depth and complexity of spices will transport you to a different realm.
Among the new signature cocktails, one standout is the visually striking
Meditation cocktail. This enchanting drink, reminiscent of a classic Japanese cocktail known as
Bamboo, incorporates saffron, cardamom, and passion fruit, all harmonized with a fragrant rose water finish. The bubbles and smoke create a meditative ambiance, blending tranquility with excitement.
In addition to
Meditation, the bar will introduce a carefully curated cocktail menu featuring:
- - Golden Smash - ¥1,900 (tax included)
- - Meditation - ¥2,000 (tax included)
- - Jasmine Mahal - ¥1,900 (tax included)
- - Vindaloo Margarita - ¥2,000 (tax included)
Each of these cocktails showcases not just the use of spices but also unique presentations and creative thought behind their formulation.
Pairing with Culinary Delights
Complementing the cocktails is an extensive bar food menu crafted by
Tejas Sovani, Executive Chef at The Grey Room in collaboration with
SPICE LAB TOKYO. The menu challenges conventional perceptions of Indian cuisine, presenting modern interpretations of traditional street foods. Guests can enjoy classic offerings such as biryani, curry, and tandoor grill delicacies, all reimagined as bar snacks.
The bar food menu includes:
- - Tandoori Chicken Tikka - ¥2,400 (tax included)
- - Garam Masala Fried Potatoes - ¥950 (tax included)
- - Seasonal Indian Bread (Kulcha) - ¥950 (tax included)
- - Biryani and Curry Set - ¥2,400 (tax included)
This array of food provides an exciting exploration of flavors, making it suitable for every visit, whether it's a cozy tea time or an evening at the bar.
A Sophisticated Oasis for Adults
Stepping behind the velvet curtains reveals a modern yet inviting atmosphere. Adorned with an art piece symbolizing India—a stunning elephant sculpture—the interior design is characterized by sophisticated gray tones that create a liberating ambiance. The spacious layout features various seating options, including table and counter seating, an open terrace, and casual standing areas, catering to everyone from solo visitors seeking relaxation to parties and corporate gatherings.
