Exclusive Kagoshima Culinary Experience at The Capitol Hotel Tokyo
The Capitol Hotel Tokyo, located in Nagatacho, Chiyoda, is set to host a special dining event focusing on the unique flavors of Kagoshima Prefecture, known for its rich natural resources and culinary traditions. This limited-time fair will take place from January 13 to March 31, 2026, offering a premium dining experience only on weekdays at the hotel's renowned Chinese restaurant, Hoshigaoka.
Chef Takayuki Yamahashi has recently visited various regions within Kagoshima, from the beautiful Kinokawa Bay to the mountains of Kirishima, fostering conversations with local producers. This engagement allowed him to curate a selection of the finest ingredients that will be featured in a special course designed to highlight the character and integrity of Kagoshima's bountiful produce.
The star attractions of the menu will be the three black delicacies from Kagoshima: Kuro-Satsuma Chicken, Kagoshima Black Cattle, and Kurobuta Pork, each prepared using distinct techniques that celebrate the unique flavors of the region. Among these, the Kuro-Satsuma Chicken left a lasting impression on Chef Yamahashi with its bold taste during his visit to the production area. Also featured is the Sennendai, a rare and luxurious fish known for its purity that is often described as “meeting once in a thousand years.” It will be steamed with a touch of seasonal aroma to accentuate its natural flavors.
Further enriching the menu, the renowned “early harvested bamboo shoots” from Kagoshima will be presented in a vibrant stir-fry, showcasing their freshness discovered by the chef during a visit to a bamboo grove. Additionally, traditional black vinegar, made in pots since the Edo period, will add depth to the dishes.
Patrons will also have the opportunity to pair their meal with craft beers from “Hifumiyo Brewing,” a company dedicated to solving social issues through its brewing practices.
Chef Yamahashi expresses his sentiments about this experience, stating, "Engaging with local producers in Kagoshima made me appreciate the rich natural blessings, longstanding culinary heritage, and the passion and dedication of these creators. About Chef Takayuki Yamahashi
Born in Shimane in 1978, Chef Takayuki Yamahashi honed his skills in restaurants in Yokohama's Chinatown during his teens. He studied authentic Chinese cuisine in China at the age of 24 and has held various chef positions at Chinese restaurants in Tokyo. Since joining The Capitol Hotel Tokyo for the opening of Hoshigaoka in 2010, he has achieved accolades including silver and gold awards at competitions sponsored by the Japan Chinese Cuisine Association. In 2023, he was awarded by the Tokyo Governor for excellence among chefs and has been selected to represent Japan at the 2024 World Culinary King Competition in Taipei. Furthermore, since 2022, he has served as a director at the Japan Chinese Cuisine Association while continuing to balance traditional Chinese culinary techniques with knowledge from Japanese and Western cuisine.
