A unique culinary experience awaits at Daimaru Tokyo as Sugahisa introduces its limited-time offering of two Thai-style Inari sushi from January 28 to February 10, 2026. Pioneering the fusion of Thai cuisine and traditional Edo-style sushi, Sugahisa, led by chef Masahiro Sugai, revolutionizes the sushi dining scene.

The Concept of Sugahisa



Nestled in the heart of Roppongi, Sugahisa stands out with its original concept of melding Thai flavors with Edo-style sushi. Chef Sugai, who ventured into the culinary world at 32, draws on his extensive experiences, including his time working in Thailand, to create sushi that is both innovative and authentic. After successfully establishing 'Sushi Sugahisa' in Kawasaki in 2017, the restaurant quickly gained a reputation, leading to its move to Toranomon Hills in January 2024 and then to its current location in Roppongi in December 2025.

The Art of Thai-Style Sushi



Sugahisa's sushi may resemble Edo-style sushi, but upon tasting, diners are greeted with a burst of flavorful Thai influences. The key to this blend lies in the harmonious balance of rice, sweetness, and acidity, which are also foundational elements in Thai cooking. Chef Sugai takes great care to preserve the core principles of Edo sushi while incorporating distinctive Thai ingredients, allowing for surprising yet familiar flavors.

The Innovative Thai-Style Inari



The two variations of Thai-style Inari offered during this event are groundbreaking interpretations of the beloved Japanese delicacy. Melding traditional flavors with Thai intricacies, each sushi delivers a complex and satisfying experience.

Green Curry Inari



The Green Curry Inari is a standout item, resulting from the chef's vision to reinvent sushi with a modern twist. This dish features sushi rice combined with a delightful mixture of green curry and fresh coriander. The addition of peanuts introduces a contrasting texture, while the interplay of sweetness, spice, and the herbal aroma of coriander makes every bite a celebration of flavor.

Tom Yum Inari



In response to the rising popularity of the Green Curry Inari, a new creation has emerged - Tom Yum Inari.
