tamago-yaki (Japanese egg omelet) shop before finally discovering his true destination. This quaint soba shop, just a mere 30 seconds away from Umejima Station on the Tobu Isesaki Line, is where the magic happens. Established 46 years ago, this gem is now under the care of the second-generation owner, who is passionate about crafting the perfect soba.
Emphasizing the importance of data in flavor crafting, the owner, who once studied information processing, declares, “
The broth is alive!” Each component of the dish—from the
kake (broth) to the

The menu features three types of noodles:
Yabu,
Inaka, and
Sarashina, allowing customers to select their preferred style. However, one standout recommendation is the unique
