On October 29, the craft tonic brewery and bar, Hiizuru Craft Mitzosho, officially opens in Machiya, Tokyo. This establishment is not only a place to enjoy crafted drinks but is also deeply rooted in the founder's childhood memories.

A Personal Connection to Machiya


The founder, Takahashi, chose to open this venture in Machiya because it holds significant memories from his childhood. His grandfather operated a confectionery company shortly after World War II, and the streets of Machiya were ones he frequented with him in a truck. This area has become a symbolic foundation for Takahashi’s entrepreneurial journey, connecting him to his past and family legacy.

A Passionate Pursuit of Flavor


During his tenure in the wholesale liquor industry, Takahashi encountered the skepticism that tonic water was a poor seller. This sparked a rebellious curiosity within him, leading him to discover the deeper nuances of tonic water. His experience at a soft drink company solidified his belief that syrups hold immense potential for flavor. Inspired by the pandemic's lockdown, he initiated a personal project: developing his very own craft tonic.

Overcoming Challenges in Production


Embarking on this journey was not without its obstacles. Takahashi faced a significant hurdle with the key ingredient of tonic water – quinine. Due to regulatory restrictions in Japan, finding a way to incorporate quinine proved to be challenging. However, recalling his grandfather's philosophy of making expensive chocolates accessible to everyone, Takahashi resolved to redefine tonic water by creating unique flavors without relying on quinine.

A Flavorful Breakthrough


As he sought alternatives for bitterness, Takahashi remembered the bitter aroma of hops from nearby breweries during his childhood. This evocative memory guided him to source hops from Niigata, establishing a distinct profile for his craft tonic. After 108 trials, the formula reached perfection. For the first time, he shared his tonic with friends and family.

Conceptualizing a Bar Experience


The name, Hiizuru Craft Mitzosho, stems from Takahashi’s personal journey of producing tonic water that envisions a fictional narrative of Japan remaining isolated. This concept allowed him to explore and recreate the beloved taste of a gin and tonic with unique flavors. In the attached eat-in bar, patrons can indulge in complex tastes, combining hops, beet sugar, lemon, lime, and other botanicals. One of the highlighted drinks is the signature ‘Mitzosho Gin & Tonic’ paired with the bottled Hiizuru Craft Tonic.

Sustainable Practices in Menu Development


True to its name, Hiizuru Craft Mitzosho emphasizes its focus on syrup production and sustainability. The bar offers innovative cocktails and soft drinks made from craft tonic and creatively uses leftover ingredients, such as a unique 'black lemonade' made from lemon and lime remnants soaked in black syrup. This mindful approach ensures that no resources go to waste.
