Overview of CROSS NIIGATA–VIETNAM Project



CROSS NIIGATA–VIETNAM is an ambitious initiative aimed at establishing a culinary bridge between Niigata, Japan, and Vietnam. This international cultural exchange project aims to spotlight the rich culinary heritage and fermentation culture of Niigata, with the first events set to take place in January 2026 in Niigata and in March 2026 in Ho Chi Minh City.

Organized by VACANCE VIETNAM Co., Ltd., under the leadership of CEO Shota Nozaki, this project invites chefs, producers, and business operators from both countries to share their expertise, creating opportunities for collaboration and innovation in culinary practices. The first set of events will feature specially designed dinners that focus on Niigata’s local ingredients and its renowned fermentation culture, setting the stage for a series of cultural and market development initiatives.

Event Details


The inaugural event will occur at Willow House, part of the SUZU GROUP, in Nagaoka City, Niigata, during January 23-24, 2026. Two internationally recognized chefs will prepare a seven-course dinner celebrating local Niigata ingredients and culinary techniques. Following this, the project will continue in Ho Chi Minh City at FUME in March, showcasing a collaborative meal that blends the culinary strengths of both regions.

Importance of Cultural Exchange


This project addresses the growing interest in Japanese food culture in Vietnam, particularly the rising popularity of fermentation and healthy eating. With the unique environmental conditions of Niigata, known for its snowy climate which enhances natural preservation and fermentation techniques, there lies significant potential for unique contributions to the Vietnamese market.

Moreover, as the Vietnamese culinary scene seeks a deeper understanding of Japanese ingredients and cooking techniques, this collaboration is poised to foster essential cultural exchange and technical knowledge.
