Freeze Lock technology (currently trademark pending), Namara Umai! Sushi Do Shinbashi ensures that local and seasonal fish are aged and frozen at their peak condition. Message from Nakamuromichi
Having been a sushi chef for 28 years, Nakamuromichi has witnessed significant shifts in the fishing environment, economy, and climate change over the years. The COVID-19 pandemic hit the company hard, with once-packed tables left empty and fishermen unable to sell their catch. This challenging time led Nakamuromichi to refine his understanding of sushi's true essence.
He developed the
Freeze Lock technique over four years, which was crucial for the establishment of Namara Umai! Sushi Do Shinbashi. “I hope many people will come to experience and savor the true nature of sushi through this endeavor,” he says. With sincere dedication, every staff member is committed to delivering the best sushi experience possible.
