Experience Authentic Edo-style Sushi at Namara Umai! Sushi Do Shinbashi

Introduction
On May 30, 2025, the new sushi restaurant Namara Umai! Sushi Do Shinbashi will open its doors in Shinbashi, Tokyo. Produced under the guidance of Nakamuromichi, former head chef of Sushi Kokoro, this establishment aims to bring together tradition and innovation by serving sushi crafted with seasonal fish from Hokkaido and premium tuna directly sourced from the renowned Toyosu Market.

Three Key Features of Namara Umei! Sushi Do Shinbashi

1. Reviving the Essence of Edo-style Sushi

Edo-style sushi dates back to a time when refrigeration and ice were nonexistent. This restaurant embraces traditional sushi preservation techniques while integrating modern methods. Through its proprietary Freeze Lock technology (currently trademark pending), Namara Umai! Sushi Do Shinbashi ensures that local and seasonal fish are aged and frozen at their peak condition. This allows for a consistent offering of authentic Edo-style sushi throughout the year, regardless of seasonal variations and supply constraints.

2. Elevating Local Fish with Sustainability in Mind

The restaurant emphasizes the use of lesser-known local fish, such as herring, horse mackerel, and flatfish, which typically struggle to reach mainstream markets. By applying traditional Edo-era techniques, the flavors of these fish are enhanced, ultimately promoting their value and helping to improve the livelihoods of local fishermen while reducing food waste.

3. Affordable Chef's Choice Courses

Edo-style sushi has always been about making luxury accessible to the public. At Namara Umai! Sushi Do Shinbashi, the chef's choice course is offered at an affordable price of 8,800 yen (tax included). For those wanting a little extra, a course with all-you-can-drink options is available for 11,000 yen (tax included). Dine on exquisite sushi without breaking the bank!

Message from Nakamuromichi

Having been a sushi chef for 28 years, Nakamuromichi has witnessed significant shifts in the fishing environment, economy, and climate change over the years. The COVID-19 pandemic hit the company hard, with once-packed tables left empty and fishermen unable to sell their catch. This challenging time led Nakamuromichi to refine his understanding of sushi's true essence.

He developed the Freeze Lock technique over four years, which was crucial for the establishment of Namara Umai! Sushi Do Shinbashi. “I hope many people will come to experience and savor the true nature of sushi through this endeavor,” he says. With sincere dedication, every staff member is committed to delivering the best sushi experience possible.
