2025 Pâté-Croûte World Championship held in Lyon, France. This prestigious title was bestowed upon him during the finals on
December 1, 2025 (local time), marking a milestone for Japanese culinary arts on an international platform.
The Championship Overview
Established in
2009, the Pâté-Croûte World Championship is an international gastronomy competition focused on the preservation and evolution of the classic French technique known as
pâté en croûte. This competition draws chefs from various global regions, including Asia, Europe, and America. After an intensive selection process, only 16 chefs advance to the final championship after regional qualifiers.
Chef Izumi's impressive skill set, showcasing an exceptional mastery over ingredient utilization, cooking techniques, aroma, and structural harmony, led him to this recognition. The dish that earned him this accolade,
Pâté-Croûte de Volaille, Foie Gras et Cèpes, exemplified a delicate balance of flavors and exquisite presentation.

A Chef’s Journey
Born in
1989 in Akita Prefecture, Sho Ito embarked on his culinary career in Yokohama's
Mittei where he honed his skills for seven years. He then spent a year working in Paris at
Dominique Bouchet before returning to Japan to join the opening team at
Les Copains de Dominique Bouchet in 2016, swiftly earning Bib Gourmand recognition in the same year.
Chef Ito has continued to rise in the culinary world, showcasing formidable talent as he made it to the finals in previous Pâté-Croûte championships and earned high acclaim. Since
2022, he has led Christophe Bouchet Tokyo, bringing a modern lightness to classic French cuisine.
