Sangai will open on the third floor of The SG Club located in Shibuya, Tokyo. Operated by the renowned SG Group, led by founder Shingo Gokan, this establishment promises a bespoke cocktail course experience that sets it apart from the traditional bar scene.
Unique Cocktail Journey
Sangai is specialized solely in offering an omakase-style cocktail course. The term “
Terroir × Terroir” embodies its menu concept, fusing ingredients from both Japanese and international landscapes. By combining seasonal Japanese produce with selected spirits sourced from different regions of the globe, Sangai aims to provide an unparalleled cocktail experience that celebrates the essence of flavor and creativity.
In today’s rapidly evolving cocktail landscape, Sangai seeks to return to the roots of creativity. The bar allows talented bartenders to explore what cocktails can truly be, freeing themselves from the constraints of efficiency and labor. Ingredients and Process
The development of Sangai’s menu involved hands-on exploration of ingredients across Japan, with Gokan and the SG Group bartenders traveling to various locations to source the finest seasonal fruits. They emphasized the importance of showcasing Japan's rich and diverse offerings. Each cocktail crafted is a meticulous process; bartenders engage in techniques that elevate delicate flavors, ensuring that every sip encapsulates the bounty of the land.
Intimate Setting
Sangai features an exclusive and intimate bar area with just
eight seats, reinforcing the idea of a curated experience. Upon entering, guests are welcomed by a charming
cedar ball made in celebration of Japan’s sake brewing god at the Omiwa Shrine in Nara. The decor blends elements of traditional Japanese aesthetics with an air of exoticism through its brick walls and unique art pieces, reinforcing the
Terroir × Terroir theme throughout the space.
This serene environment, coupled with the bar's limited seating, allows for a relaxed focus from start to finish, enhancing each guest's cocktail experience. The atmosphere fosters a connection between the bartenders and patrons, promoting a deeper appreciation for the craftsmanship involved in each cocktail.
Reservation and Offerings
Sangai operates on a reservation-only basis, with an initial session lasting
90 minutes, extending to
120 minutes starting in September. The opening menu features a five-cocktail course, with the option for guests to order from an a la carte menu for additional dishes or classic cocktails. As the seasons change, Sangai’s course offerings will also evolve, allowing guests to continuously enjoy the freshest ingredients.
