The Story Behind Kabenoana
Founded in 1953 under the name “Hole in the Wall,” Kabenoana opened its doors in the Tamura area of Tokyo. Takayasu Narimatsu, the founder, is celebrated as the creator of Japanese spaghetti. His culinary journey began unexpectedly during a chance meeting with Paul Bloom, the first head of the CIA’s Tokyo branch, which led to a partnership that would ultimately introduce spaghetti to Japan. Early in its history, Kabenoana focused on perfecting the spaghetti cooking technique, even tailoring the cooking time to individual customer preferences.
