Celebrating its fifth anniversary, THE HIRAMATSU Karuizawa recently released a new digital content edition titled "Reading Hiramatsu." This edition showcases a special dinner created by two master chefs, Akiro Yanagihara of French cuisine and Yusuke Maeda of Italian cuisine. Their culinary journey embodies the essence of the region, emphasizing the importance of local producers and seasonal ingredients.
The issue titled "Terroir Cultivated by Time" highlights the chefs' exploration of nearby farms where they gather fresh flowers and late-autumn vegetables to craft their signature menu.
During this unique dining experience, guests are invited to indulge in an exquisite dinner course along with an overnight stay. This innovative plan arose from customer feedback, reflecting the desire to experience both French and Italian cuisines in one visit. Chefs Yanagihara and Maeda have put their passion and respect for each other's cooking into a beautifully harmonized course, where flavors of both worlds intertwine.
The dining experience begins with an amuse-bouche from the French cuisine, leading up to antipasti from Italian fare and a second appetizer from French cuisine. This delightful arrangement allows guests to traverse through two distinct culinary worlds.
As the meal progresses, dessert prepared by pastry chef Naoto Ishiyama, who has traveled with Chef Yanagihara to forge relationships with local producers, brings together the essences of both French and Italian styles in a single plate, leaving patrons with a sweet and lasting impression. To further elevate the experience, a selection of wines and non-alcoholic drinks curated by the sommelier is also offered as a pairing.
