On September 12, 2025, “Shimesoba Sansan” will debut in the New Man Takanawa complex, introducing a contemporary interpretation of the Japanese culinary tradition of finishing a meal with soba. This new establishment, operated by Grip Second Co., Ltd., promises to blend the art of soba with innovative culinary experiences and a diverse selection of beverages.

Unique Soba Experience



At Shimesoba Sansan, visitors can enjoy homemade, 100% buckwheat soba, meticulously crafted from select buckwheat flour sourced from various regions in Japan. The restaurant ensures that the flavor and aroma of the soba reflect its seasonal origin, with the goal of delivering the highest quality soba experience. For the opening, the restaurant will use buckwheat from Hokkaido, with plans to rotate the sourcing according to the best available seasonal ingredients.

The culinary team prepares the soba with attention to detail, resulting in a dish that balances fragrant flavors and a delightful texture. Dining at Shimesoba Sansan is not just about eating; it’s about savoring the full experience of eating soba paired with carefully curated drinks.

The concept of “soba-mae,” which refers to small dishes served while enjoying alcohol before the soba course, will be celebrated at Shimesoba Sansan. Signature dishes will feature flavors that excite the palate, such as the “Charcoal-Grilled Young Chicken Thigh with Sansho Miso,” and the luxurious “Free-Range Chicken Parent-Child Egg Dish.” Additionally, patrons can look forward to internationally inspired options like garlic chicken fritters and calamari fritters, showcasing the restaurant's eclectic culinary approach.
