A Unique Collaboration: Blending Kanazawa's and Noto's Sake for a Future Together



In a commendable step towards revitalizing the Noto region following the devastation caused by the 2023 Noto Peninsula Earthquake, Tsuruno Sake Brewery and Fukumiya, both distinguished sake producers, have collaborated for the second year to develop a special limited-edition sake called "谷泉×加賀鳶 2025 純米" (Taniizumi × Kagatobi 2025 Junmai). On July 1, 2025, this carefully crafted sake is set to hit select markets, further promoting the healing spirit of the region.

A Blend of Distinctive Flavors


The collaborative sake represents a perfect balance between the rich traditions of Tsuruno and Fukumiya. The combination honors both brands’ flagship sakes, Taniizumi and Kagatobi, blending them in equal measures to create a refreshing junmai sake. This second year's release promises an ease of enjoyment, offering consumers a light and lively drinking experience, making it accessible for both beginners and seasoned sake lovers alike.

Collective Efforts for Resilience


The input for this collaborative creation came from Tsuruno's CEO, Shintaro Tsuruno, and Taichiro Fukumitsu from Fukumiya, both of whom were directly affected by the earthquake. With a willingness to support the recovery, both breweries joined forces with brewing masters including Yukiko Tsuruno and Kazuhiko Itaya to engage all members in the production process. This inclusive approach embodies a true community effort, allowing all the artisans from the Tsuruno brewery and their colleagues in the Noto region to express their commitment to rebuilding through their craft.

Attention to Detail in Naming and Design


The sake’s name reflects the lineage of both breweries, showcasing both the history and potent flavors of these evolved rice wines. The label design creatively inverts Taniizumi’s logo color, maintaining a clear focus on an equal blend. The use of green and silver hues, paired with a transparent bottle, signifies the lightness and freshness the sake embodies.

Target Audience


This collaborative sake is aimed at those supporting the recovery of the Noto breweries, ranging from novices to aficionados and even local restaurants and gift markets. Featuring both 720mL and 1.8L options, each format is limited to 4,300 and 650 bottles respectively, at a suggested retail price of 1,540 yen and 3,080 yen, including tax.

The Story Behind the Breweries


Founded between 1789 and 1804, Tsuruno Sake Brewery has been producing significant sake like Taniizumi and Noritai, embodying the flavors and traditions of the Noto region. Fukumiya, the oldest brewery in Kanazawa, has been crafting exquisite sake since 1625, utilizing "Hyakunen Mizu," a unique water source from Mount Hakusan. Their flagship labels like Kagatobi and Fukuseimasu remain well-loved among sake devotees.

In developing the "Taniizumi × Kagatobi 2025 Junmai", both breweries not only strive to enhance their legacies but also stand united in their dedication toward restorative efforts in Noto, ensuring the continuation of a beloved tradition affecting future generations.
