A Fusion of Tradition and Innovation: Tsunami Brewery at TRANOMON JUST RIGHT NEW FOOD 2025



On June 19, 2025, Tsunami Brewery, based in Tsunan Town, Niigata Prefecture, participated in the TRANOMON JUST RIGHT NEW FOOD 2025 tasting event held at the Sustainable Food Museum in Minato, Tokyo. This exciting event was organized by Sustainable Food Asia (SFA) to celebrate the launch of the third phase of "TRANOMON JUST RIGHT NEW FOOD," which aimed to connect food tech startups with restaurants in the Nishinbashi and Toranomon areas.

The initiative brought together innovative products from nine regional startups and encouraged meaningful exchanges with over ten restaurant owners. Tsunami Brewery proudly showcased its premium sake, the "GO GRANDCLASS Uonuma Koshihikari Edition," made entirely from Uonuma-grown Koshihikari rice. This award-winning sake achieved a gold medal at the Kura Master Sake Competition in 2024 and is celebrated as a unique product born from the region's natural assets, including snow country's pure brewing water and proprietary yeast, all enhanced through smart brewing techniques using generative AI.

Kenjo Suzuki, the President and CEO of Tsunami Brewery, presented insights about the craftsmanship behind the "GO GRANDCLASS" sake, sharing details about its production and the commitment to sustainability. He also discussed the brewery's upcycling projects featuring sake lees, such as the innovative product "melty snow."

In addition to Tsunami Brewery's offerings, the event featured a variety of groundbreaking food products, including Regenerative LLC's high-ergothioneine supplement, "SAISEI Regenerative Supplement," and Orise's egg-free koji mayonnaise. Attendees engaged in spirited tastings and discussions, contributing to a collaborative atmosphere among innovators in the food industry.

The event marked a significant step forward in Tsunami Brewery’s mission to broaden the spectrum of possibilities within the sake industry. The brewery is dedicated to challenges and regional collaborations that promote sustainable practices and innovative solutions across the food and beverage sector.
