Business Growth Strategy with Ludovic Reysset


To lead the business growth strategy, NoMy Japan has welcomed Ludovic Reysset, an accomplished professional with over 30 years of experience in driving growth strategies and business transformations within the global food industry. His rich background spans diverse markets in Europe, North and South America, and Asia, making him a true global talent fluent in five languages.

Before joining NoMy, Ludovic served as the Managing Partner of SparkFood, a family office part of SONAE, where he managed a significant plant-based investment portfolio totaling €100 million. He has also driven strategic M&A initiatives and successfully scaled multiple brands. Previously, at Danone, he held key roles such as Global Sales Director for markets including Japan and Brazil, and Managing Director for the Portugal branch, where he led large commercial organizations and drove category growth in various markets.

Ludovic's profound expertise in plant-based, functional, and alternative food sectors, combined with his ability to translate commercial strategies into scalable outcomes, adds tremendous value to NoMy. We are excited to have him on board at this crucial time to accelerate commercialization as we expand our operations in Japan and Europe.

Intellectual Property Strategy with Eran Noah


Additionally, NoMy Japan has appointed Dr. Eran Noah as the Director of Intellectual Property (IP) to expedite the commercialization of innovative fermentation technologies and mycoprotein products. Eran brings over 25 years of scientific expertise alongside 15 years of experience as a global patent attorney, specializing in innovation and IP strategy in the agri-food and alternative protein sectors.

Through his own firm, Noah IP, he has built a world-class intellectual property portfolio, connecting R&D, legal strategies, and business growth. As a global IP mentor at The Good Food Institute (GFI), Eran advises startups worldwide on how to protect IP while scaling innovative technologies and ideas. His strategic, practical approach will further bolster NoMy's expertise in fermentation science, food product development, and commercialization.

Food Development Expert Alessandra Massa


To further solidify our footing in the Japanese mycoprotein market, Alessandra Massa joins as an advisor in culinary development and food product innovation. A gastronomic scientist with a focus on filamentous fungi, she has conducted groundbreaking research at the Basque Culinary Center (BCC) and is dedicated to sustainable protein sources. Alessandra's knowledge and passion align perfectly with NoMy's expanding R&D and product development initiatives.

Together with Alessandra, we will continue to promote the diverse potential and value of protein materials derived from koji (fermented rice) as "delicious, nutritious, and sustainable new protein sources" tailored for the Japanese market.
