On January 28, 2026, BIKiNi medi in Ikebukuro will host an extraordinary one-night dinner titled "Gastronomy × Journey," celebrating the essence of Spanish cuisine. The event will feature the expertise of eminent Spanish chef Josep Barraona Vinyes, who is revered as one of the foremost authorities on Spanish culinary traditions in Japan. The evening promises to be a delightful exploration of Mediterranean flavors, allowing guests to savor a curated menu that reflects the diversity of Spanish regions.

In collaboration with Chef Jun Takuwa from BIKiNi medi, Chef Vinyes will create a magnificent multi-course meal that showcases some of the most iconic dishes from various parts of Spain. Each course will be paired with carefully selected wines, enhancing the dining experience and offering a deeper understanding of Spain's rich gastronomic culture.

The culinary journey begins with the famous "Bikini" hot sandwich, derived from the Catalonia region and made from high-quality Ibérico Bellota ham and mozzarella, perfectly grilled to golden perfection. Following this, guests will enjoy a selection of eight micro pinchos, which are small, flavorful dishes that exemplify the art of Spanish tapas.

One of the highlights of the evening will be the modern take on the traditional Andalusian cold soup, Ajo Blanco, served with tuna. This dish presents a beautiful harmony of flavors, showcasing Chef Vinyes' innovative approach to classic recipes.

Seafood lovers will be thrilled with a dish featuring scallops and cuttlefish, enhanced by a vibrant salsa verde from the Basque region. This traditional sauce adds a burst of freshness, complementing the seafood beautifully. Meat lovers will be treated to premium cuts of Wagyu and Ibérico pork, known for their rich flavors and melt-in-your-mouth textures. An exquisite rice dish, Arroz Caldoso made with 15 varieties of seasonal vegetables, will also be served, showcasing the profound connection between the land and its produce.

To conclude this unforgettable evening, a selection of five bite-sized desserts will be presented, offering a sweet end to the culinary adventure. About Chef Josep Barraona Vinyes


Chef Vinyes was born in 1966 in Catalonia, Spain, and relocated to Japan in 1991 as the head chef of a Spanish restaurant. He gained widespread recognition as the first executive chef of Ôgasawara Prince Hotel, where he obtained a Michelin star in 2008. He is also known for his innovative contributions to the Spanish Pavilion at the Expo 2005. Today, he leads his exclusive atelier, L'estudi, where he continues to redefine Spanish culinary traditions across various platforms, including catering, seminars, and publications.
