The goal is to make 'forty three' a landmark where locals can proudly claim, “When you think of Gifu, you think of this place.” It promises to be the ultimate spot for every occasion, whether to celebrate with family, introduce friends to the local scenery, or simply enjoy seasonal delicacies. The subsequent offerings include a 'specialite' featuring seasonal fish alongside sweetfish, alongside exclusive items like a rich lobster dish and the main meat course, 'Nanatani duck,' served with a deep sauce made from Hida miso and red wine. Modifications for Hida beef are available based on seasonal ingredients.

Another standout is the 'Composition of Seasonal Fish and Sweetfish.' This dish captures the rich flavors of sweetfish, harvested at its peak and transformed into a creamy puree that diners can enjoy throughout the year. Meet Chef Hayato Hirose


Born in Gifu Prefecture in 1983, Hirose honed his culinary skills at a French restaurant in Aichi for seven years after graduating from Tsujicho Culinary School. Following this, he spent three years at NARISAWA in Minami Aoyama before dedicating 12 years to 'L'Effervescence,' where he mastered world-class techniques and philosophies. His journey has now brought him back to his roots, where he aims to elevate Gifu’s dining scene at 'forty three.'
