On April 18 each year, the World Food Travel Association (WFTA) invites communities from around the globe to join in acknowledging and safeguarding the culinary practices and traditions that are at risk of extinction. This newly established annual celebration emerges in response to the increasing pressures of globalization, industrial standardization, and changing consumer habits, which threaten unique culinary identities.
In recent years, the value of food as a cultural expression has become increasingly apparent. Many communities worldwide are defined by their culinary heritage, which encompasses everything from family recipes passed through generations, traditional production methods, to the unique ingredients and cooking techniques cherished by local populations. Yet, studies reveal that approximately 13% of traditional culinary practices have either disappeared or are severely endangered. Experts warn that this alarming trend is accelerating, with the keepers of these culinary traditions—farmers, fishers, chefs, and local communities—often remaining unseen and unrecognized.
“Culinary heritage goes beyond what is on the plate; it embodies the grandmothers whose recipes are cherished through generations, the farmers cultivating almost-forgotten grains, and communities employing fishing techniques that predate written history,” explains Erik Wolf, Executive Director of the WFTA. “These traditions are vanishing faster than we can document them. World Culinary Heritage Day serves as a global call to recognize their value before it's too late.”
