In light of declining regional populations – from approximately 14.21 million in 2020 to a projected 13.47 million by 2030 – the company initiated the “Project to Energize Kyushu” in 2021. This project seeks to collaborate with local businesses, promote regional products, and further enhance the local culture, all while focusing on ramen enthusiasts.
The new Kurume-style tonkotsu ramen is a vital part of this project, aimed at reviving passion for the local ramen culture and connecting with both longtime fans of Umakacchan and newcomers curious about the rich flavors of Kurume ramen.
Overcoming Challenges in Flavor Creation
Driven by the dedication of a team member from Kurume City, the development of this ramen wasn’t without its struggles. The challenge was to recreate the distinctive foam when pouring the broth while ensuring a bold tonkotsu flavor. After sampling 16 bowls of Kurume ramen during extensive research trips, the team pinpointed the perfect seasoning powders that highlight the deep umami and fragrance characteristic of tonkotsu.
The result is a broth made rich through more than double the usual amount of pork seasoning compared to standard Umakacchan offerings. This ensures an irresistible creamy texture with vibrant, appetite-stimulating flavors, inviting customers to experience an authentic taste of Kurume style.
