On July 25, 2026, the Better Home Association, headquartered in Shibuya, Tokyo, will host a unique cooking class at its Ginza location featuring summer bonito sourced from Kesennuma City, Miyagi Prefecture. Known for its rich maritime culture, Kesennuma is Japan's top producer of bonito, and this class promises an immersive experience in the art of cooking this delicious fish.

The Allure of Kesennuma



Located amidst stunning natural landscapes, Kesennuma is a thriving port town that has maintained its title as the leading producer of bonito for 28 consecutive years. From early summer to autumn, the town becomes a hub for bonito fishing, showcasing the region's culinary heritage. Attendees at the cooking class will enjoy fresh bonito that has been delivered directly from the morning catch to the venue, enhancing their tasting experience.

Bonito is not only flavorful but also packed with nutrients. It is high in protein and contains plentiful vitamins and minerals that aid in recovery and help prevent summer fatigue. What to Expect at the Cooking Class



The class will include three main hands-on cooking activities:

1. Bonito with Mustard Miso: Enjoy the freshness of bonito sashimi paired with onion and a zesty mustard miso. This preparation elevates the fish's unique umami flavor and eliminates any fishiness.

2. Bonito Steak Salad: Delight in a fresh salad featuring lightly-seared bonito, complemented by Kesennuma's renowned thick wakame seaweed and a splash of ponzu sauce. Garnished with crispy garlic chips, this dish is both flavorful and refreshing.

3. Bonito Tartare: Utilizing all parts of the fish, this tartare is made with diced bonito, olives, and capers, combined with olive oil for an unforgettable appetizer.

Live Fish Filleting Show



One of the highlights of the event will be the live bonito filleting show, where attendees can witness the skillful technique of the instructor. Guests will even have the chance to sample freshly caught sashimi slices with a sprinkle of salt. Additionally, we will serve a rich broth made from bonito bones along with Kesennuma's famous bonito sake, allowing participants to fully appreciate the local flavors.
