Starting on March 2, 2026, the popular shabu-shabu restaurant chain "Okaka" operated by Brand Bank Company will unveil its seasonal special: "Fresh Sea Bream Shabu-Shabu with Naru's Fresh Seaweed." With locations in Shinjuku, Ichigaya, Kitahama, and more, Okaka prepares to delight patrons with this exquisite dish.
Exquisite Ingredients
This shabu-shabu features the brand sea bream, "Shimai Mirai," nurtured in the Sukumo Bay of Kochi Prefecture. Known for its firm texture and delicate sweetness, it offers an elegant taste experience. The dish is enhanced by the addition of freshly sourced Naru seaweed from Tokushima, which thrives in the strong currents of the region, imparting a unique flavor and delightful crunch. Both ingredients shine when lightly cooked in a delicate broth provided by Okaka, alongside seasonal vegetables such as Kyoto's nanohana (rapeseed blossoms).

The sea bream is cultivated using innovative practices by Marine Liner Co., aiming for responsible aquaculture recognized with ASC certification. "Fresh Sea Bream Shabu-Shabu with Naru's Fresh Seaweed" is available from March 2 until early May, priced at 4,290 yen per person (tax included). Reservations are for a minimum of two persons, and customers can enjoy unlimited freshly shaved katsuobushi (dried bonito flakes) served at the table.
