In light of this crisis, Kitchen Tech, a company based in Shinjuku, Tokyo, is stepping up to help. They will host free workshops under the name "Ramen School" targeting current ramen shop owners and those looking to start their own business. Scheduled for August 28 and September 9, 2026, in the Osaka Ramen Specialty Hall located in Sumiyoshi Ward, these sessions aim to provide critical skills and strategies to enhance operational efficiency in ramen shops.

The Need for Free Training



With approximately 1,500 ramen shops in Osaka alone competing fiercely, rising costs of raw materials and utilities have created a perfect storm for many businesses. Many owners are reluctant to raise prices due to what is known as the "1,000 yen barrier", a psychological threshold that makes customers apprehensive about higher costs. Consequently, the pressures have forced many shop owners to stretch their resources thin, raising concerns about sustainability.

In response to feedback from struggling shop owners—many of whom are worried about compromising quality or their health due to overwhelming operational burdens—Kitchen Tech has developed this innovative series of free, hands-on classes designed to enhance efficiency without sacrificing taste.

Demonstrating Time Efficiency



The standout feature of the Ramen School is its practical demonstrations aimed at showcasing how to decrease preparation times. Participants will witness and taste the difference in traditional cooking methods versus more efficient techniques across three key areas: broth, noodles, and chashu (braised pork).

Broth Making



One of the highlights includes the use of a pressure cooker to extract broth in a significantly reduced timeframe. Typically, making quality broth can take close to 10 hours, but this method can potentially bring it down to just 2.5 hours. Participants will have the chance to directly compare the time-saving benefits and assess the flavor profile themselves.

Noodle Preparation



Another exciting portion of the workshop will focus on the use of in-house noodle machines. By transitioning from outsourced noodles to freshly made varieties, participants can taste differences in both aroma and texture, whilst also realizing the financial benefits that can arise from controlling production in-house.

Chashu Comparison



Additionally, attendees will sample chashu prepared using two different methods: a traditional pressure cooker and a convection oven. The goal is to highlight differences in moisture and flavor, allowing participants to choose the technique that best fits their vision for their ramen offerings.

The venue for Ramen School, the Osaka Ramen Specialty Hall, recently opened and is notably the first facility of its kind in western Japan dedicated to culinary equipment. In fact, just ten days prior to the first workshop, they launched a ramen-specific test kitchen that enables aspiring chefs to practice with professional-grade tools. This quick turnaround speaks not only to the urgency of the situation but also to the commitment Kitchen Tech has to empowering Osaka's ramen entrepreneurs.

Mr. Segawa, a representative from Kitchen Tech, shared, "With over 1,500 ramen shops in Osaka, we see daily competition and, unfortunately, a lot of closures. Many places offer excellent taste but falter under the pressures of preparation and cost management. Our aim with the Ramen School is not to sell our equipment but to provide an opportunity for owners to evaluate tools that can effectively support their business. By offering this program free of charge, we hope to encourage those hesitant to take the next step."
