Cook Street School of Culinary Arts has unveiled a comprehensive Professional Pastry Arts Program, set to run from June 8 to July 31, 2026. This dynamic eight-week course is tailored for aspiring pastry chefs and serious home bakers, providing them with immersive, hands-on training designed to sharpen their skills in a real-world kitchen setting. Classes will take place Monday through Friday, from 8:00 AM to 2:00 PM, focusing primarily on practical baking experiences.

Under the guidance of Executive Pastry Chef Yna Zuniga, the program aims to delve beyond mere recipes and cultivate a deeper understanding of the culinary art. The curriculum is structured around lectures, demonstrations, and active daily production that helps students grasp the foundational science behind pastry making. This exploration includes ingredient behavior, process organization, sanitation practices, and presentation techniques across a variety of pastries and desserts.

The eight-week program progressively advances students from basic pastry and bread techniques to more complex culinary creations. Instruction covers a wide array of topics, including breads, tart doughs, custards, meringues, sugar techniques, choux pastry, cakes, cookies, and more. Participants will also engage in chocolate work, mousses, entremets, menu planning, plating techniques, and the exploration of regional and global desserts. The program culminates in public assessments, including a bake sale where students can showcase their honed skills.

With around 240 training hours allotted, the program maintains a favorable student-to-instructor ratio of 10:1. Participants will receive a well-rounded education in pastry arts, which includes a ServSafe® certification, necessary textbooks, a pastry kit, uniforms, and essential materials. Additionally, Cook Street provides resumé development, interview coaching, and job placement assistance to support graduates as they transition into their culinary careers. Successful completion of the program awards students a Certificate of Pastry Arts.
