About Chef Tetsuya Yasuzato
At the helm of this exquisite creation is Chef Tetsuya Yasuzato, who began his culinary journey in 1988 as a Japanese cuisine chef. Inspired by
mizugashi, the traditional Japanese fruit dessert served after meals, he transitioned to pastry-making at the age of 25. His exemplary skills led him to join Nagoya Tokyu Hotel in 2000, winning several prestigious awards, including first place at the Japan Cake Show’s Top of Patissier in 2009. Since 2010, he has served as the executive pastry chef at The Capitol Hotel Tokyo, where he focuses on using seasonal ingredients to create simple yet classic delights that embody the essence of each season.
