The Fresh Cheese Studio, dubbed “FRESH CHEESE STUDIO 深沢工房店,” provides patrons with the opportunity to savor and purchase freshly made products right from the studio. Among the standout offerings is the burrata cheese, crafted with utmost care, along with a range of other fresh cheeses that showcase the authentic depth and richness of milk.

In tandem with the offerings, the studio is committed to sustainability, featuring creative dishes that utilize cheese byproducts. This integration not only highlights the variety in cheese production but also reflects the brand’s core philosophy: to embrace and promote sustainable practices in the food industry.

During the preview event on June 27, attendees enjoyed fresh mozzarella crafted on-site, along with a special dish created in collaboration with Executive Chef Sugimoto of the Imperial Hotel. Additionally, attendees heard insights from Mr. Wakasugi, Executive Officer from Kitahiroba Farm in Tokachi, regarding the philosophy behind their operations, emphasizing the happiness of both people and cows.

Chef Sugimoto expressed his impressions of the burrata, stating, “The moment I tasted the fresh burrata, I was captivated by its natural sweetness, milky flavor, and delicate texture. I hope this product helps more people appreciate the charm of Japanese dairy farming and its culinary delights.”

The special dish served was “Tenchi Burrata with Seasonal Vegetable Terrine.” This appetizer encases the creamy burrata in a vibrant vegetable terrine, offering a delightful contrast between the smooth richness of the cheese and the crisp textures of the vegetables, complemented by a touch of seasoning.

Mr. Wakasugi remarked on the brand’s progress, expressing joy in seeing the studio reach a new level. “We aim to convey the uniqueness of the milk produced in our locality by embracing nature-distinctive dairy practices.
