Exclusive Christmas Desserts at Aqua Ignis
Enjoy the festive season with unique Christmas desserts by renowned patissier Masanori Hata at Aqua Ignis, located in Mie Prefecture, Japan. Running from December 20 to 28, 2025, this collaboration brings an exquisite dining experience to guests, offering a glimpse of Hata’s award-winning creativity. He is recognized for winning the prestigious Coupe du Monde de la Pâtisserie 2025, showcasing his exceptional skill and artistry in pastry.
Dessert Features: A Winter Wonderland
Hata's Christmas dessert is an embodiment of winter's charm, featuring a delightful combination of strawberries and yuzu. It includes two distinct sauces, reminiscent of a serene winter forest. One sauce presents a soft green hue infused with yuzu-flavored sparkling white wine and minty notes. The other sauce is a clear jelly made from yuzu, chromoji (Japanese spicebush), and green tea, offering a refreshing taste that reflects the invigorating aroma of winter woods.
This dessert, designed with a fluffy sabayon sauce, enhances the overall experience through its light and refreshing flavors, alongside a forest jelly sauce that adds an additional layer to the dessert's character. Each bite invites you to immerse yourself in the wintry atmosphere Hata envisioned.
Farm-to-Table: Fresh Ingredients
Aqua Ignis takes pride in using freshly harvested strawberries from the on-site Tsujiguchi Farm, operated by esteemed chef Hiroyuki Tsujiguchi. Unlike the strawberries typically found in supermarkets, which are picked before reaching peak ripeness, guests at Aqua Ignis benefit from tasting strawberries that are at their absolute best—ripe and bursting with sweetness. This commitment to local sourcing highlights the essence of farm-to-table dining, ensuring a unique and flavorful dessert experience.
Culinary Artistry: The Holiday Dessert
The dessert includes exquisite garnishes, such as red snowflake patterns inspired by Hata’s vision, adding a thematic appeal. The core components consist of chocolate parfait, yuzu cream, spice cookies, and decorative candy chips. This visually stunning dessert promises a multidimensional taste sensation that is not only a feast for the eyes but also a treat for the palate.
Additionally, this special dessert will also be served as part of the Christmas dinner at the Italian restaurant within Aqua Ignis, Sala Bianchi al Checciano, creating an enchanting dining experience to commemorate the Christmas season.
