UN GRAIN Celebrates 10 Years with Special Projects Connecting Creativity and Community

UN GRAIN's 10th Anniversary Celebration



This November, UN GRAIN, a specialty shop by Yoku Moku celebrating exquisite mini pastries, will proudly commemorate its 10th anniversary. The event — themed "One Seed, Connected Creativity" — acknowledges the support from many throughout the years. Various exciting projects will unfold between July and November, each designed to express gratitude and inspire creativity.

Special Initiatives to Look Forward To



First Project: Collaborative Parfaits with Alumni Pastry Chefs


The excitement kicks off with the launch of collaborative parfaits featuring alumni pastry chefs who once graced the UN GRAIN kitchen. Two projects are lined up:

1. Wakana Nozawa: Known for her own brand, she previously served as a chef at UN GRAIN; she'll unveil a special parfait from July 18 to 21.
- Parfait Theme: A refreshing, summery delight showcasing fragrant peaches layered with the citrus of konatsu and mint's refreshing touch, intertwined with Japanese ingredients like shiso and ginger.
- Price: 2,000 yen (tax included).
- Wakana's Comment: "Participating in UN GRAIN's 10th anniversary is an honor, and I can’t wait to share this moment with everyone!"

2. Misaki Hatatani: Another talented pastry chef and past UN GRAIN staff member, will present her creation from September 12 to 15, featuring flavors that transition from summer to autumn.
- Parfait Theme: The interplay of warm, transitional flavors that narrate the journey from summer into fall, with a focus on seasonal ingredients.
- Price: 2,000 yen (tax included).

Second Project: Participation in External Events


Following the success of its past programs, UN GRAIN will now participate in its first large-scale external event. With this step, the brand aims to convey appreciation to supporters and introduce the delights of UN GRAIN to a broader audience. Details will follow on official channels.

Third Project: Revival of Classic Mini Pastries


As part of the anniversary festivities, beloved mini pastries (minialdes) that have graced the shop over the years will return for a limited time. This initiative aims to evoke nostalgia for returning guests while inviting new patrons to discover past creations.

Fourth Project: Luxury Collaborations with Former Chefs


In November, a stellar collaboration featuring former chefs will culminate the anniversary celebrations. Expect extraordinary parfaits created by:
1. Fumiaki Kanai (former head chef now at Patisserie INFINI),
2. Tomonari Kombu (currently running Kombuya Sangobei in Fukui).
- Signature creations by both chefs will be presented alongside UN GRAIN's current chef, Takashi Okazawa.
- Okazawa’s Background: A graduate of Saitama Belle Époque Culinary School in 2016, Okazawa has worked in renowned kitchens and only recently returned from culinary training in France. He’s now leading the creative culinary efforts at UN GRAIN.
