Among these new creations are enticing names like "Drowning Meat Sauce" and "Forbidden Cacio e Pepe."
A Rich Culinary History
Founded in 1953 by Takayasu Narimatsu, Kabenoana originally opened under the name "Hole in the Wall" in Tokyo, setting the stage for a unique dining experience. Narimatsu's ties to cultural influencers led to the development of numerous spaghetti varieties. This included pioneering dishes such as the first-ever mentaiko spaghetti, based on inspirations drawn from his encounters with notable figures and diverse culinary experiences.
The restaurant initially took a novel approach, cooking spaghetti upon ordering, allowing customers to influence the cooking process. This participatory dining concept not only strengthened relations with patrons but also led to the development of over 200 pasta variations.
