On November 14, 2025, KINNOE, a new hub centered on fermentable fibers, will officially open its doors in Setagaya at the HOME/WORK VILLAGE. As interest in gut health and well-being rises, KINNOE aims to provide a welcoming space for individuals of all ages, especially those in their 20s and 30s, to learn, shop, and eat with a focus on fermentable fibers.

KINNOE is designed under the theme of "learn, buy, eat," fulfilling the growing demand for knowledge on how to incorporate fermentable fibers into daily diets. The store has three key features:

Learning: Visitors can experience mini-workshops and exhibitions showcasing the fundamentals of fermentable fibers and gut health.

Press Day and Reception
Ahead of the grand opening, KINNOE will welcome press personnel for interviews and tastings on November 13, from 11:00 AM to 3:00 PM. No prior registration is required for the press event. Additionally, a reception is scheduled for December 8, from 2:00 PM to 5:00 PM, for industry professionals and local stakeholders to connect and sample dishes made from fermentable fibers in conjunction with a shared kitchen at HOME/WORK VILLAGE.

The inspiration for KINNOE stems from the historic significance of the location, previously home to Ikegiri Middle School, established in 1955 when traditional Japanese diets included ample sources of dietary fiber. Over the decades, as the economy flourished and diets became more varied, the consumption of fiber, especially fermentable fibers, has drastically declined, falling short of the World Health Organization’s recommended intake. KINNOE seeks to rekindle the dietary habits of the past and promote a lifestyle that naturally incorporates these vital nutrients.

The name KINNOE encapsulates the essence of fermentable fibers, which serve as food for gut bacteria. It cleverly translates to 'kin (菌), the word for bacteria, plus 'noe', which originates from 'feed', reinforcing the store's core mission of educating the public on these essential nutrients.
