Experience the Flavors of Shikoku at Shikoku Tavern
Starting January 21, 2026, the popular Shikoku Tavern will unveil an exciting new seasonal hot pot menu, showcasing the rich and diverse flavors of Shikoku. The restaurant, operated by Brand Bank Company, has gained a reputation for its commitment to using fresh, high-quality ingredients that reflect the values and aspirations of producers.
Seasonal Hot Pot Offerings
The new menu features three distinct hot pot dishes:
1.
Araki’s Buri Shabu - Served with Naoshichi Ponzu
This dish highlights the exquisite quality and balance of fat in Araki’s Buri, a premium variety of Japanese amberjack. To enhance its flavors, the fish is paired with a refreshing Naoshichi Ponzu sauce made from a locally prized citrus. Enjoy the light and delicate texture as you dip slices of Buri into steaming broth, experiencing a perfect harmony of sweet and tangy notes that will leave you wanting more.
2.
Madai Mirai Shabu - Served with Naoshichi Ponzu
With an eco-friendly approach, this dish uses Madai Mirai, a type of sea bream that is both tasty and sustainably farmed. The fish is cooked just right to bring out its rich umami and bouncy texture. The addition of Naoshichi Ponzu accentuates the delicacy of the Madai, making it a delightful experience for the palate.
3.
Ginger Nira Nabe
Perfect for the colder months, this pot is filled with a rich dashi base, abundant ginger, and generous amounts of nira (Chinese chives). Each bite warms you from the inside out, combining the soothing flavors of ginger and the sweet essence of nira, making it an ideal comfort food for winter.
