Celebrating Women's Contribution with New Japanese Sake 'Appare' by Kakuyasu

Introduction


In December, Kakuyasu, a subsidiary of Hitomairu, proudly introduces a limited edition sake called "Appare". This special brew is crafted by female toji (sake brewers) in collaboration with Yahiko Brewery as part of the "READY! LADY! READY!" project, organized by Niigata Sake Association. With a focus on promoting female participation in the sake-making process, this initiative reflects a broader commitment to diversity and cultural sustainability within the sake industry.

Background of the Collaboration


Kakuyasu's support for the "READY! LADY! READY!" project is rooted in its dedication to sustainability and the perpetuation of culinary cultures. The sake industry has only about 40 women toji, which shows that there’s room for growth and inclusion. Women-led sake production symbolizes a step toward diversity and sustainability in Japanese culture, resonating strongly with Kakuyasu's core values. Yahiko Brewery exemplifies this with its remarkable concept of exclusively female-led sake-making.

Additionally, Yahiko Brewery is renowned for having certified master toji among its ranks, recognized as a hallmark of prestige and skill. Project Details


The entire process from rice planting to brewing was conducted collaboratively between participating companies, Yahiko Brewery, and Niigata Sake Association. The result of this teamwork is "Appare", a premium junmai ginjo sake crafted using Iyahiko rice (special cultivation Koshihikari) blended with Yahiko's highly-regarded "Yahiko Gokujunmai". This sake boasts a clear, transparent quality paired with fruity aromas and a prominent yet delicate finish that complements a variety of dishes.
