Discover the New Delicacies from Kirino Saka Lab!
As autumn approaches, the unique and creative rice cracker artisans at Kirino Saka Lab, a division of Chuo Ken Senbei, are excited to announce the launch of two limited-time snacks, 'Jako Peperoncino Okaki' and 'Kinako Okaki with Black Syrup.' These delectable treats will be available from September 2 to October 31, 2026.
A Fusion of Tradition and Innovation
Founded in 1923, Chuo Ken Senbei has a long history rooted in tradition and craftsmanship. This skilled team has come together to form the Kirino Saka Lab, an experimental kitchen that melds the time-honored techniques of rice cracker making with innovative ideas. The result is an exploration of the diverse and untapped potential of rice as a snack ingredient.
The lab’s recent experiments included over 60 unique recipes, culminating in these two exciting offerings after rigorous tasting sessions. The brand’s motto, 'Okaki can be more exciting and delicious,' drives the team’s pursuit of flavors that break conventional boundaries.
The New Offerings
1.
Jako Peperoncino Okaki (30g × 2 bags, Price: ¥810 incl. tax)
This snack features a crispy, light texture that pairs beautifully with the savory flavors of the small fish, 'jako.' Infused with bold garlic and chili seasonings, it offers a refreshing yet robust taste experience perfect for pairing with drinks. This unique combination elevates the traditional rice cracker into a gourmet snack that surprises and delights.
The recipe combines 'jako' with dried sardines in a carefully calculated blend to enhance the umami flavor. The base is made entirely of glutinous brown rice, which adds depth and aroma, supporting the fish's natural flavor. Ideal for snacking on its own or as a creative topping for potato salads.
2.
Kinako Okaki with Black Syrup (5 pieces × 3 bags, Black syrup 15g × 3 bags, Price: ¥810 incl. tax)
Revamping a 50-year-old classic, this snack incorporates three times the amount of peanuts into the dough, resulting in an overwhelmingly rich flavor. Shimmering layers of sweet black syrup atop the roasted soybean flour create a uniquely delightful and almost dessert-like experience, easily transforming ordinary snacking into something extraordinary.
Customers are encouraged to explore various serving options, like topping this snack on vanilla ice cream or yogurt for an extravagant treat.
Behind the Creation
Product development leader, Kaneko, shares her thoughts: 'During our weekly tasting sessions, we often find ourselves surrounded by piles of these innovative snacks. After going through numerous iterations, the excitement in the room was palpable when we finally landed on these two products. Balancing the aroma of 'jako' was challenging, but we managed to capture its essence with the help of sardines. We invite you all to taste the fruits of our labor.'
