In July 2026, the Codex Alimentarius Commission (CAC49) convened in Geneva, Switzerland, marking a pivotal moment for the baking industry. Among the notable achievements of this 49th session was the adoption of the first internationally recognized Codex Standard for baker's yeast, proposed by Angel Yeast, a leading global yeast manufacturer based in Yichang, China.

This groundbreaking standard fills a long-standing void in the international regulatory landscape for yeast products, establishing a comprehensive framework that governs production, trade, and regulatory oversight worldwide. By promoting uniformity and science-based practices, the new standard is set to facilitate international commerce while reinforcing the protections available to consumers.

The formation of this standard can be traced back to a joint proposal initiated by Angel Yeast and the China National Research Institute of Food and Fermentation Industries (CNRIFFI) in 2021. Following extensive international consultations, this initiative gained formal recognition as a Codex work item in 2024. Notably, during the drafting process, China assumed a pivotal leadership role, collaborating closely with delegates from France and Turkey to negotiate and refine the new standards.

Angel Yeast has been instrumental throughout the entire process, leveraging its extensive technical knowledge and quality management experience, honed over decades in the industry. Their involvement also reflected their commitment to advancing industry standards globally. CNRIFFI played a crucial role by coordinating the drafting and consultation processes, supported by discussions on food safety and Codex priorities among member countries.

Their successful registration of China's National Standard for Yeast Extract with the Egyptian Organization for Standardization and Quality in 2013 exemplifies their influence and dedication to establishing benchmarks within emerging markets.
