Cousins Maine Lobster Expands into the Southwest



Cousins Maine Lobster (CML), a leading brand in the fast-casual seafood market, is set to make a big splash in the Southwest with its latest expansion. The company has signed a multi-unit agreement that will introduce four new food trucks across New Mexico, Texas, and Arizona. This strategic move comes in response to the increasing demand for high-quality seafood options in these regions, particularly for CML's renowned lobster rolls, tacos, and grilled cheese sandwiches.

Exciting New Locations



The first of the new trucks will hit the streets in Albuquerque, New Mexico, expected to launch in May 2026. Following that, food enthusiasts in Phoenix, Arizona, will be able to indulge in the beloved lobster offerings by August 2026. Additionally, two more trucks are planned to roll out in 2027, targeting El Paso, Texas, and Tucson, Arizona.

This expansion is spearheaded by Chris Wilson and Gary Andrews, who have been friends and business partners for many years. They first encountered Cousins Maine Lobster when one of the food trucks visited their community and quickly recognized the potential of this venture. After launching two food trucks in Lubbock, Texas, last year, they demonstrated their ability to build a loyal customer base through excellent service and delicious food.
