A Culinary Journey through Spring


The 'Spring’s Colors and World’s Three Delicacies Course' is masterfully designed to fuse traditional French culinary techniques with seasonal freshness, reflecting a commitment to sustainable practices. Each dish is thoughtfully prepared to showcase the beauty and richness of spring ingredients, including cherry trout, white asparagus from France, and locally sourced seabass (known as ‘Haru Tsugeru’ or 'Spring Messenger Fish') and vegetables. The use of these high-quality ingredients serves as a testament to Chef Takahashi's dedication, with every plate shining in elegance.

The course begins with an amuse-bouche of lightly cooked cherry trout paired with a delicate bouquet salad, offering a refreshing start to the meal. It is followed by an appetizer comprising white asparagus and snow crab cocktail, complemented by a creamy caviar sauce and a jelly made from crab shell consomme — a superb example of flavor pairing.

The soup course features a loop of fresh snow peas, paralleled with a foie gras parfait and black truffle. The richness of the ingredients harmonizes beautifully, ensuring an unforgettable taste of spring.

For the fish course, diners will delight in the poached lobster paired with the seasonal 'Haru Tsugeru' seabass, all enveloped in a concentrated Americane sauce, made from the lobster shells. This dish embodies the seasonal freshness of Tokyo Bay.

Moving to the meat course, guests can savor a steak made from 'Better Meat', featuring Japanese Black beef fillet, infused with a subtle hint of Western wasabi in a light gravy sauce. This approach aims to honor traditional meat while supporting ethical consumption through an appreciation of previously undervalued ingredients. Accompanying seasonal vegetables, such as bamboo shoots and wisteria sprouts, add depth and flavor to the dish.

The meal concludes with a dessert showcasing the Tochigi-grown ‘Tochiai Strawberry’ in a classic Romanoff style, combined with fresh cream and a touch of Cointreau-flavored syrup, presenting a visually captivating finish to the dining experience.

In addition to delectable dishes, the course also emphasizes sustainability. It includes a focus on local produce to enhance and promote a smaller carbon footprint within the dining environment. Located on the 6th floor of the Tokyo Dome Hotel, 'Deux Mil' is where guests are invited to explore a warm, inviting atmosphere conducive to sharing special moments with loved ones. Reservations are essential for this limited-time offering, with lunch served from 11:30 AM to 2:30 PM and dinner from 6:00 PM to 10:00 PM on weekdays, extending to an earlier opening of 5:00 PM on weekends. The entire experience is priced at ¥18,000 per person, inclusive of service fees and tax.
