The featured instructor, Hiroshi Fujii, the fourth-generation leader of "Koujiya Danshiro," has been crafting miso in Niigata since 1932 and will illuminate the history of miso production, including why the region is known for its unique varieties and the essential role of fermentation in local cuisine.
A Hands-on Experience
Participants will not only observe the process but will also engage in hands-on activities, creating their own batch of miso to take home. This allows for ongoing enjoyment as they witness the fermentation process transform their miso over several months, essentially bringing the experience home and prolonging its value.

Instructor's Profile
Hiroshi Fujii
Hiroshi Fujii is the current head of Koujiya Danshiro, founded in 1932 in Niigata’s Minami Ward. After completing his studies in brewing at Tokyo Agricultural University, he honed his craft over several years in other regions before returning home. Alongside his wife Yasuyo, he continues to innovate and produce high-quality miso, investing in both tradition and modern techniques.
