Discover the Art of Katsuobushi: Live Stream Event
On February 14, 2026, Kikkoman International Food Culture Center will host a special live event titled "The Secrets of Katsuobushi: The Art of Slicing!" This unique food culture seminar will take place at Kikkoman's KCC Hall in Tokyo and also be available for free on YouTube Live starting at 14:00.
Katsuobushi, a key ingredient in Japanese cuisine, significantly contributed to the flourishing of Edo-era food culture. This event is a sequel to the successful seminar held in June 2025 called "The Secrets of Katsuobushi’s Deliciousness," focusing specifically on the art of slicing this delicacy. While the convenience of packaged katsuobushi has decreased the frequency of manual slicing at home, the unique aroma and flavor of freshly sliced katsuobushi are unmatched.
The workshop will be led by Ms. Nozomi Oginome from NINBEN Co., Ltd., an expert in katsuobushi research and development. With a background in marine science from Tokai University, Ms. Oginome has specialized in the analysis, safety assessment, and fundamental research of katsuobushi and its various forms. Her experience includes developing new seasonings and conducting quality control. During the event, she will cover topics such as the evolution of the katsuobushi slicer, its usage, and tips for slicing katsuobushi perfectly.
Participants will have the chance to experience the art of katsuobushi slicing, with a lottery selecting 12 attendees to join a hands-on session on site. Whether you’re familiar with katsuobushi or seeing a slicer for the first time, this event promises to be informative and engaging. All registered attendees will receive an exclusive URL to access the live stream, which will remain available for viewing until March 31, 2026.

- - Application Deadline: For in-person attendance, applications must be submitted by February 4, 2026, at 23:59. If oversubscribed, a lottery will be held, and notifications will follow after February 5. For those wishing to watch via YouTube, applications can be submitted up until the event date.
