Indulge in Winter with the New Bisque Sundubu by Nakayama Tofu

As the new year ushers in colder temperatures, the time for warming comfort food arrives. Nakayama Tofu, a subsidiary of Tobira Dining, is set to launch a limited-time delight: the "Bisque Sundubu", available from January 14, 2026, at its dedicated Sundubu restaurant. The Bisque Sundubu is a culinary embodiment of winter luxury, expertly crafted with a rich soup base that marries the flavors of dashi from bonito with the depth of pork. This is further enriched by a bisque infused with concentrated shrimp essence. The moment the soup touches your palate, the delightful aroma of shrimp unfolds, complemented by the umami-rich broth characteristic of Sundubu.

Nestled within this warming dish is Nakayama Tofu's own signature tofu, made using the renowned Japanese soybean variety, Toyomasari. Lovingly prepared in-house each day, this tofu is recognized for its sweetness and delicate flavor. Each bowl of Bisque Sundubu comes generously adorned with substantial shrimp, mussels, potatoes, zucchini, onions, and chives – pure comfort for the winter season.

The Bisque Sundubu is affordably priced at 1,190 yen (tax included: 1,309 yen), making it an inviting choice for a satisfying meal during the chilliest of days.

Additional Offerings

In addition to the Bisque Sundubu, Nakayama Tofu will continue to serve a variety of traditional Sundubu meals that have garnered a loyal following since its inception.

About Nakayama Tofu

Founded in May 2020, Nakayama Tofu originally opened its doors in Takadanobaba, followed by a second location in Akihabara in September 2021. The restaurant specializes in Sundubu, a Korean soft tofu stew that has become increasingly popular among business professionals and students looking for hearty, healthy meals that are easy to enjoy solo.

Passion for Quality

At Nakayama Tofu, a relentless commitment to quality is evident in everything we do. Our homemade tofu is crafted from Toyomasari soybeans, which are lauded for their rich flavor and natural sweetness, often referred to as "the champion of soybeans." Our tofu boasts a high sugar content with low fat, resulting in a soft, luxurious product.

The Sundubu soup itself is a product of meticulous preparation, incorporating rich dashi, pork base, homemade paste, and vegetables. The balance of flavors from the pork and clams, along with the depth from the paste, highlights the elegance of our tofu, allowing patrons to savor the true essence of Sundubu.
