Starting from March 25, 2026, Nén Tokyo, a modern Vietnamese restaurant located in Daikanyama, Tokyo, will launch a new seasonal tasting menu titled 'Tales of Vietnam.' This initiative by Nen Global Corporation, led by Chef Summer Le, aims to showcase the vibrant flavors of Vietnam through the lens of Japanese spring ingredients.

Chef Summer Le, renowned for receiving the first Michelin Green Star in Da Nang, Vietnam, is celebrated as a pioneer of sustainable gastronomy. Her innovative approach blends traditional Vietnamese flavors with deeply sourced spring ingredients from Japan, culminating in an exceptional culinary experience designed to resonate with the delicate nuances of the Japanese seasons.

'The Last Bite, Beyond' (Hotaru Ika x Corn Risotto)


In this dish, seasonal firefly squid takes center stage, combined with the traditional Vietnamese sticky corn rice known as Xôi bắp. The flavors are elevated by a fermented mango sauce, delivering a powerful interplay of the six tastes: sour, spicy, salty, sweet, bitter, and umami, leaving a vibrant aftertaste.

'Soy, Salt, Sun' (Cod and Nanohana x Tương Bần)


Celebrating the arrival of spring, this dish features cod and nanohana, complemented by the traditional Vietnamese fermented soybean sauce, Tương Bần. With ingredients that parallel Japanese miso, this sauce embodies the free spirit of Vietnam and adds an unknown depth to the dish, enhancing the natural flavors.

'Robusta' (Robusta Coffee Ice Cream)


This dessert highlights Vietnam's robust coffee, renowned for being the second-largest coffee producer in the world. It balances the bold bitterness and nutty aroma of Robusta with a salted cream, transforming the coffee into a modern Vietnamese dessert, illustrating the country's evolving coffee culture.
