Celebrating Culinary Excellence: The 2nd Best Practices Recognition Award
The Culinary Institute of Barcelona (CIB) recently celebrated the second edition of its prestigious
Best Practices Recognition Award (BPR). This initiative highlights global restaurants that not only excel in culinary prowess but also showcase exemplary practices in workplace training and employee development. Held at the Gastronomic Forum Barcelona, this year’s event saw notable winners including
Lasarte,
Osteria Francescana, and
PAZ. The virtual ceremony facilitated participation from these renowned establishments, emphasizing their commitment to culinary training and excellence.
A Reflection on Culinary Achievements
The BPR Awards aim to shine a light on the behind-the-scenes operations of successful kitchens. As CIB's Academic Director, Ona Mundó, stated, "Recognizing those who do things right even when no one is looking allows us to broaden our understanding of culinary excellence today." The awards seek to complement traditional culinary awards that often focus solely on the quality of food and presentations. The committee evaluates how effectively kitchens manage their teams, train their staff, and create a productive work environment.
The Winners and Their Contributions
This year, the awards celebrated an impressive list of international restaurants:
1.
Lasarte (Barcelona) - Awarded three Michelin stars, known for its innovative culinary techniques.
2.
Osteria Francescana (Modena, Italy) - A globally recognized entity in Italian gastronomy.
3.
PAZ (Tórshavn, Faroe Islands) - This recipient has received accolades for its unique Nordic culinary interpretations.
4.
Âme (Barcelona)
5.
Madeleine by Ferrières (Barcelona)
6.
Batea (Barcelona)
7.
Besta (Barcelona)
8.
La Pubilla (Barcelona)
Adding to the prestige, the list included both Michelin-starred dining experiences and smaller, local favorites for the first time, indicating a broader appreciation of culinary diversity and excellence.
Evaluating High Standards in Culinary Practices
The assessment committee of the BPR comprises CIB's academic management and internship departments, tasked with selecting restaurants that formalize specific internship agreements with the institute and who have successfully completed a minimum of
1,040 hours of tutorship. Selected criteria evaluate the quality of the work environment, the consistency between the restaurant's philosophy and daily practices, the ability to build stable and educational teams, and a sustained commitment to positive labor practices, among other aspects.
According to Mundó, these assessments and recognitions are crucial in establishing high standards across the culinary sector globally. CIB's expansive network includes over
200 partner restaurants across 25 countries, showcasing its influence and contributions to the culinary arts.
Recognition and Future of Culinary Education
During the BPR award ceremony, CIB was also recognized by the
Slow Food Guide as a reference educational institution in the sustainable gastronomy sector. This designation marks CIB as the first culinary school to be included in the guide's selective affinities, enhancing its reputation in the global culinary education landscape.
The Culinary Institute of Barcelona, founded in 2017, prioritizes a curriculum that inspires creativity and innovation in a changing world. CIB trains culinary professionals from various countries, cultivating entrepreneurial skills and teamwork amongst students, distinctly distancing itself from traditional French-inspired culinary education models.
As we reflect on the accomplishments celebrated at this year’s BPR, it becomes clear that culinary excellence encompasses more than just the food served on the plate. It is about the practices, the training, and the commitment to creating a better culinary world.
