Chef Fumiyuki Kinsu’s Culinary Journey

After honing his skills at the Michelin-rated French restaurant Tateru Yoshino, Kinsu moved to Hong Kong in 2018 to work with renowned chef Shun Sato, founder of CENSU. His time in Hong Kong enriched his understanding of global culinary techniques and led to his return to Japan to open CENSU TOKYO.

Reflecting on the past two years, Kinsu expressed, "The opening in July 2023 was a whirlwind of excitement and challenges. I remember, during those early days, feeling a mix of anxiety and exhilaration as I juggled various responsibilities. Every day was a new lesson, but those memories have become some of my most cherished."

CENSU TOKYO stands out as the first international branch of the Hong Kong establishment and aims to create a dining experience that tantalizes all five senses. The establishment not only offers innovative izakaya cuisine but also provides a space where various cultures and flavors meld wonderfully.

Over the last two years, CENSU TOKYO has participated in remarkable collaborations and events that have shaped its identity. One of the highlights was participating in the collaboration event 'DEN x CENSU' in September 2024, which honored the third anniversary of CENSU in Hong Kong. Kinsu mentioned, "It was nerve-wracking yet exhilarating to work with Chef Zaiyu Hasegawa, someone I admire deeply. We shared an unforgettable experience, even going squid fishing together!"

Another notable event was 'YAKUSOKU 2.0' held in February 2025, where Kinsu had the chance to work alongside Chef Hiroyasu Kawate of Florilège, another one of his culinary inspirations.
