Collaborative Development of Traditional Linzer Augen Cookies by Happa-en Chefs and Nasu Takuyo High School Students

Experience the Taste of Collaboration: A Journey to Linzer Augen

In a delightful collaboration between Happa-en, a comprehensive production company, and students from Nasu Takuyo High School's Food Culture Department in Tochigi, a unique recipe for the traditional Austrian treat, Linzer Augen, has been developed. This creative venture results from a partnership with the city of Nasu-Shiobara, bringing a fusion of local flavors and international culinary arts to local and visiting guests at the 2025 Osaka Expo.

A Taste of Tradition at the Osaka Expo

From July 27 to 28, 2025, visitors to the Austrian Pavilion at the Osaka Expo will have the chance to savor a limited edition of these cookies made according to the newly developed recipe. This event marks an exciting moment where tradition meets innovation, showcasing both local Tochigi ingredients and the culinary excellence of Austrian cuisine.

The journey to this remarkable cookie began with a shared passion for culinary arts between the Happa-en chefs and high school students. Using local strawberries for the jam, they have taken the classic Linzer Augen—a beloved treat known for its buttery texture and sweet fruit filling—and given it a fresh twist, one that not only honors the original recipe but also introduces a unique Tochigi essence.

Building a Lasting Legacy

Since establishing a sister city relationship in June 2016, Nasu-Shiobara and Linz, Austria, have fostered profound cultural exchanges. The collaboration has extended beyond the events of the 2020 Tokyo Olympics, where both cities engaged in host town activities, leading to heartfelt interactions focusing on food culture. Happa-en has been at the forefront of these initiatives, developing culinary events that spotlight the rich flavors and traditions of both regions.

This partnership allowed the Nasu Takuyo High School students to work hands-on with expert chefs, engaging in developing and refining recipes, thus enhancing their culinary skills while fostering a community spirit. The Linzer Augen embodies both the traditional aspects of Austrian baking and local Japanese ingredients, packaged in a cookie that tells a story of shared culture and collaboration.

The Sweet Treat Unveiled

The release of Linzer Augen will begin with an earlier sale at the local Nasu confectionery, Nemunoki, in Nasu-Shiobara starting July 19, 2025. This local workshop will debut the cookies, holding a special place for the residents while the broader audience can enjoy them during the Expo.

The Linzer Augen itself features layers of buttery cookies with a vibrant strawberry jam filling, designed to resemble the sweet treat's signature ‘eyes’. A nod to the Austrian flag, the cookie pairs strawberry jam with creamy milk jam, presenting a contrast of flavors and textures that make it a delightful treat to savor, whether enjoyed daily or on special occasions.
