Four Seasons Hotel Tokyo Otemachi, located in the heart of Chiyoda, is renowned for its exceptional destination bar, VIRTÙ. Recently, VIRTÙ has launched a remarkable series of original Japanese vermouths and tonic waters in collaboration with Hiyori Co., Ltd., celebrating the art of Japanese botany and cocktail culture. This enticing range features three distinct vermouths: the dry "SÈCHE," the white "SHIRO," and the sweet "AKA," accompanied by the unique tonic water "KARUI." These products harmoniously complement the signature cocktails crafted at VIRTÙ, offering guests an unparalleled tasting experience.

In developing this exquisite line, Keith Motzi, the head bartender at VIRTÙ, expressed his excitement: "Vermouth and tonic water are foundational to our cocktails. We have been passionate about creating a true essence, capturing the lightness and richness of Tokyo's spirit. To finally realize a drink that embodies the aromas of this land is a dream come true for us."

The Vermouth and Tonic Series


The collection consists of four premium offerings, blending local botanicals and Kofu wine from Hiyori Winery. Each vermouth is made with meticulous care and showcases artisan skills:

  • - SÈCHE (Dry): Infused with yuzu from Fuji River town in Yamanashi and blended with the Baikamo bark, this innovative vermouth reveals a refreshing bitterness and is based on Kofu's white wine from Hiyori.

  • - AKA (Sweet): A sweet vermouth that harmonizes delicate floral notes from cherry leaves with the depth of Japanese mugwort. This delightful blend is crafted using premium merlot wine from Hiyori, delivering an elegant and impressionable finish.

  • - SHIRO (White): This vermouth is based on Kofu's white wine, enhanced with fresh honey from domestic kilhada bees. The refined sweetness of the honey mingles with the herbal notes, elegantly extending the drink’s aftertaste.

  • - KARUI: The tonic water blends three Japanese citrus fruits—yuzu, shikwasa, and jabara—with Kofu grape extract, creating a refreshing drink that pairs beautifully with VIRTÙ's cocktails, such as the prominent "Somei Yoshino" and "Yuzu Nagomi."

VIRTÙ aims to ensure that guests can enjoy the unique flavors of their cocktails beyond the bar setting; thus, the original vermouths and tonic waters are available for purchase at THE LOUNGE, located on the 39th floor of Four Seasons Hotel Tokyo Otemachi.

The Essence of Hiyori Co., Ltd.


Founded in April 2018, Hiyori Co., Ltd. is a winery and craft beverage manufacturer in Katsunuma, Yamanashi Prefecture. The company was inspired by the flourishing craft distillery scene that represented sophistication and creativity during its founder Mari Hayasaka's study in London. Upon returning to Japan, she decided to establish a winery and brand centered on unique products, including "hiyori wine," "hiyori vermouth," and "kizashi tonic water." By incorporating natural Japanese materials like cherry blossoms and kilhada, Hiyori promotes sustainable regional initiatives while delivering a unique taste experience that combines contemporary craftsmanship with traditional Japanese aesthetics. Part of their sales is annually donated to the National Greening Organization in support of sustainable practices, connecting Japan's craft culture to future generations and abroad.
