About Champagne SALON
Champagne SALON is a unique champagne made from Chardonnay grapes harvested from a single vineyard. It is only produced in exceptional years, adhering to a strict philosophy that has defined its legacy since its first vintage in 1905. With only a handful of vintages released over the years, it boasts an unparalleled rarity and is often described as the 'mythical champagne' due to its exceptional quality, delicate flavors, and complex aromas developed through long aging.
A Culinary Extravaganza
The event will feature Didier Depond, President and Chief Winemaker of Champagne SALON and Delamotte. This special dinner will pair SALON with culinary creations by Chef Yuhei Miyamoto, showcasing a multi-course meal that includes tapas, homemade bread, appetizers, fish, meat, desserts, and petit fours. The wine selection includes not only Champagne SALON, but also various Delamotte wines such as Delamotte Brut NV and Delamotte Rose NV.

Didier Depond
Born in 1964 in the Loire Valley of France, Didier Depond grew up with a deep appreciation for wine, influenced by his grandfather's winemaking. As the President and Chief Winemaker of Champagne SALON and Delamotte, he upholds the tradition and philosophy established by founder Aimé Salon while continually striving for quality perfection in his craft.
Chef Yuhei Miyamoto
Born in 1988, Chef Yuhei Miyamoto joined the Mirazur team in 2019, where he quickly advanced from apprentice to sous-chef, learning the philosophy of Chef Mauro Colagreco. He brings his experience from working in one of the best restaurants in the world to his role as the head chef at CYCLE, where he focuses on portraying the beauty of nature through his culinary creations.
CYCLE by Mauro Colagreco
Opened in October 2023, CYCLE is the first restaurant in Japan by Chef Mauro Colagreco, the owner of the renowned Michelin three-star restaurant, Mirazur. The restaurant emphasizes the importance of vegetables and herbs in its dishes, showcasing the beauty and sustainability of nature. Notably, CYCLE has received a Michelin star and a service award in just its first year, and it is the first restaurant in Japan to achieve a European standard of Plastic Free Certification.
