The renowned main dining restaurant, Il Teatro, at Hotel Chinzanso Tokyo, is set to embrace a new chapter with the appointment of Chef Alberto Folco as the new Executive Chef starting in March 2026. With an illustrious career rooted in Italian cuisine, Chef Folco takes over from the previous chef, Naruhito Tabata, who will assume a new role overseeing all Western dining operations at the hotel.

Back to the Roots with a New Approach



Il Teatro, established in 2001 through the legacy of the famed Four Seasons Hotel Milano, has made a significant mark as a pioneer of Italian dining in Japan. This luxurious establishment, adorned with sparkling chandeliers and impressive floral arrangements, offers a serene view of the seasonal Japanese garden, creating a perfect ambiance for savoring authentic Italian cuisine alongside a curated selection of fine wines. As the restaurant prepares to celebrate its 25th anniversary in 2027, Chef Folco's arrival heralds a return to the roots while also pioneering innovations that reflect both Italian heritage and Japanese seasonal ingredients.

Signature Dishes that Reflect Cultural Fusion



Hailing from Treviso in the Veneto region of Italy, Chef Folco has honed his culinary skills through experiences in Italy, Australia, and Japan. He refers to Japan as his “second home,” showcasing his ability to blend traditional Italian techniques with the rich flavors of Japanese cuisine. A key aspect of Folco's culinary philosophy is his emphasis on acidity, achieved through the artful use of vinegars, citrus, and herbs, elevating the natural sweetness and aroma of the ingredients.

One of his signature dishes that encapsulates this philosophy is the “Beets and Sweet Shrimp Risotto.” This stunning dish combines the earthy sweetness of beets with the delicate layers of flavor brought by raspberry vinegar, creating a dish that is visually striking and richly complex in taste. The signature rice dish will be available throughout the year as part of seasonal dinner courses and also as à la carte options, symbolizing the new journey of Il Teatro under Chef Folco's guidance.

Introducing the Fresh Seasonal Menu



Developing a fresh seasonal menu, Il Teatro will launch the “Bosco di il Verde Fresco” dining experience from April 13 to May 15, 2026. This exclusive dining experience features a meticulously crafted menu priced at 20,000 yen (tax included, service charge extra), including:
  • - Appetizer: Octopus Genovese with spring cabbage & lime
  • - Pasta: Pappardelle with Ripe Piennolo tomato, majoram, and hazelnut pecan nuts
  • - Risotto: Beets and sweet shrimp risotto (+1,200 yen)
  • - Fish dish: Eyes ajar with tomato, white balsamic, and rapini aqua pazza flavor
  • - Meat dish: Wagyu fillet or duck breast with sweet and sour chicory, new onions, and fermented tomatoes
  • - Dessert: Melon with chamomile
  • - Coffee, espresso, or tea included

Who is Chef Alberto Folco?



Chef Folco's culinary journey began in Italy, where he trained at the prestigious Hotel Danieli in Venice, then broadened his horizons in Australia. His first trip to Japan was in 2009, where he honed his skills under Chef Enrico DelFritin at the UK Royal Family’s kitchen. Following a brief period abroad, he returned to Japan in 2022 as the sous-chef at Il Teatro, before being appointed as the executive chef in March 2026. Chef Folco continues to embrace the fusion of traditional Italian cooking with the exquisite ingredients found in Japan, especially focusing on the balance of flavor through inventive acidity.
