The bakery is fervently dedicated to craftsmanship—the essence of its philosophy being that every loaf is made from scratch, or ‘Ichi kara’ in Japanese.

Utilizing a blend of traditional French techniques such as low-temperature long fermentation and the unique yudane method, coupled with their innovative ultra-high hydration method, MAISON ICHI ensures that every piece of bread is a work of art. The buttery goodness is infused into the dough, constituting 50% of the total mixture, resulting in a luxurious croissant that is both flaky and moist on the inside. MAISON ICHI embodies ‘simple luxury in everyday life.’ The emphasis is on authenticity, employing traditional handmade methods and high-quality ingredients to create breads that are not only enjoyable daily but also memorable. The bakery employs a meticulous process wherein the dough undergoes low-temperature fermentation (4-7°C) for 12 to 24 hours. This gentle fermentation develops the full aroma and flavor of the wheat. The addition of yudane enhances moisture retention, resulting in a bread that is irresistibly fluffy and soft.

With this impressive overhaul, MAISON ICHI expands its repertoire beyond its previous focus on semi-hard breads. The new offerings include crispy pastries and high-hydration breads, enhancing the quality and variety of its lineup. Product launches continue with a second wave planned for August 18, 2025.
